Origin (production area): The Kallmet area and surrounding villages, in a geographical length not exceeding 30 km from the location of the Kallmet winery.
Olive variety: 70% Kallmet olive - Native Albanian variety, grown in the area of and 30% different varieties.
Tradition: The cultivation of this variety of grape and the brandy it produces is inherited by the families of winemakers in the area, both for family consumption and for the market. All families in the area own this variety and have produced oil with traditional press methods on foot or stone mills. In addition to this native variety, other Albanian and foreign varieties are also grown in the area.
Production method: After the harvest period, which takes place between the end of October and the first half of November, the olives are sent to the oil mill, which uses the method of cold processing and centrifugal separation of the oil. Pegasso 500 model from the OMT brand (Officine Meccaniche Toscana). The olives are carefully selected to obtain extra virgin oil. The green color of the olives must prevail, which must be cleaned and processed immediately after harvesting. The oil obtained is deposited in stainless steel containers and left to naturally settle for a period of 3-4 months. Afterwards the glass bottles are filled and go directly to the market.
Organoleptic characteristics: Presented in green color, with characteristic olive scent. The physical-chemical indicators detected for the quantity produced, after being analyzed in the ISUV (Institute of Food and Veterinary Safety) laboratory, appear on the back label of the product.
